The atmosphere of earth has changed drastically over the past 4.5 billion years (and continues to change)due to chemical factors, life, volcanic activity, temperature, radiation from sun, etc. It is reasonable to assume Mars has a similar dynamic.
Photosynthesis requires C02 + H20 + sunlight. Lots of Liquid water?! That could be a problem. Also, plants require nutrients from the soil such as Nitrogen. Scientists are looking at this on a small scale.
It is not that we can't it is just that even if we left now we would die before we reach another galaxy. Also it would be challenging to have enough food, water, etc. so it really isn't a question of why can't we but when will we.

Well, as far as I know there isn't anything past a black hole, instead it crushes everything and destroys it. So basically if our galaxy was sucked into a black hole it would no longer exist.
